Recipe: Tuna Tartare from The Lobster Trap

 

It’s no secret that the Lobster Trap in Bourne, MA is one of the best places for seafood on Cape Cod. We are fortunate enough to have head chef Dan Delancey offer up his tuna tartar recipe, which some of the Salty Cape staff enjoyed in late July, as you can see in the video above.

Lobster Trap Tuna Tartare

Step 1.) Mix all of the following into a large mixing bowl:
• 1/2 bottle Sweet Chili Sauce (1 pint total)
• 1/2 bottle of Ketchup (6oz total)
• 1 Cup Sour Cream
• 1 Cups Mayo
• 1/4 Cup Sriracha
• Wasabi Powder (to taste)

Note: These ratios provided directly from the Lobster Trap kitchen for bigger portions, so you likely will not use the whole bowl with 1 pound of tuna.

Step 2.) Dice 1 pound of tuna small.

Step 3.) Dress tuna with spicy tuna sauce. Add sauce to taste

Step 4.) Garnish with pickle ginger and seaweed salad and fried wonton chips. Serve on a chilled plate.
